CLARKSVILLE, Tenn. (CLARKSVILLENOW) – Restaurant owners Theresa and Greg Shea are bringing their own Cajun and creole style to the Clarksville area with their new restaurant, Roux.

The newly-renovated restaurant is located at 125 Franklin Street.

The couple moved to Clarksville from Bowling Green, Ky. to find new opportunities and audiences for their Cajun-inspired cuisine. Greg Shea, who was born and raised in New Orleans, is the head chef and mastermind behind most of the hand-crafted dishes.

Theresa Shea said many of the menu items come from old family recipes and rely on unique spice blends to bring out the authentic Louisiana flavor. Some more traditional American options will be available for those who prefer a little less heat.

The restaurant’s French name reflects the base in most of the dishes, which is derived from flour and oil. Theresa said roux can be cooked using a variety of flavors and colors including blonde roux, peanut butter roux, and medium colored roux.

The Sheas pride themselves on homemade, locally-sourced food that is fresh and made-to-order. They plan to make their own bread on site, most of which will be used for their special shrimp Po’ boy sandwiches.

“We joke that our food is our babies, and we eat our babies,” Theresa said.

She recommends new customers try the following dishes:
• Boulettes: Pork, rice and Louisiana sausage that is rolled and deep fried
• Catfish Marigny: Deep-fried fillet of catfish over jambalaya with crawfish etouffee
• Tennessee Whiskey Bread Pudding (Theresa said it will knock your socks off).

“Come hungry and come often,” she said.

The Sheas are happy they chose downtown Clarksville for their new location and have quickly built relationships with other downtown business owners.

“We are committed to Clarksville 100 percent. We put our entire lives here,” Shea said. “We’ve really gotten to know the rest of the restaurants and our neighbors. All of these people came and helped us. It’s been an honor to be with these people and work with these people.”

Roux announced on Facebook that it is open as of March 21.
